Well, to be honest, I don't think you are going to be able to get any
*definitive* information on the number of Sky TV subscribers who
participate in equestrian activities. I have my doubts that such
detailed statistics gathering has ever been done.
However, I have contacted Sky TV to see whether they have such data
and are willing to part with it. (I can't think anyone other than Sky
TV would have done such a study.)
In the meantime, we *can* come up with some statistical "guesses" (and
that's all they are at this point) as to the number you require.
First, the number of people who are equestrians:
The best figures (and the ones that get quoted elsewhere) are from the
British Horse Society and were gathered in 1999.

Note: There are plenty of other interesting stats here as well - have a look!
So, we know that in 1999, 4.5% of the UK population were equestrians.
We can assume that the percentage hasn't changed significantly since
then.
Your figure of 7,436,000 Sky TV *homes* certainly seems to be borne
out by the latest financial report of Sky TV:

However, if you go to page 10 of the above report, you see a much
larger number listed as:
Total Sky pay homes = 11,297,000
Total Sky homes = 14,748,000
If we take your figure of 7,436,000 homes and multpily by the 4.5%
equestrian figure, we get:
7,436,000 * .045 = 334,620
So we can say that about 300,000 - 350,000 equestrian homes in the UK
get Sky TV. One assumption that I'm making here is that the percentage
of equestrians who have TVs in their house is similar to that of the
general population.
If we use the larger 11M and 14M figures above, this final number will
increase, of course.
If you want me to convert that number to *people*, I can find the
average household size and multiply.
Let me know what you think. I'll let you know what I find out from Sky
TV about more precise figures.
