I'd like to know the number of ships in each class that each of the Great
Powers had during world war 1 and world war 2.

As there was massive shipbuilding during each of the wars, you really
should specify exactly what date you'd like the information for. 
Also, are you seeking only military ships -- or all classes of
civilian vessels?

I'd like to know the number of Military ships (including submarines)
in each class that each of the Great Powers had during World War 1 and
World War 2.  The Great Powers includes (for my purposes)WW1: United
Kingdom, USA, Germany, France, Italy, Austria-Hungary, Russia, Turkey,
Japan.  WW2: United Kingdom, USA, Germany, France, Italy, Russia,
Japan.  I want to know how many each country started with as well as
those added during the conflict.  I don't care about any ships lost,
decommissioned or otherwise removed from the fleet roster.  The number
of 'Q-ships' or armed merchant vessels would be nice too but are not
required (again disregard the number lost.)

Are you including submarines? Or not?

You could check out these four books
Janes Fighting Ships 1914
Janes Fighting Ships 1919
Janes Fighting Ships 1939
Janes Fighting Ships 1945
These are all reprints and have details of every countries navy in the world.
They should be in any majour library service.
