Is there a specific law in Florida which enables a bar to sub contract
bartenders and how does it work?

Perhaps you should clarify what you mean (post it as a comment and
more people may sight it).
I would imagine the situation of a bar within some other establishment
 - restaurant, club, theater, stadium -  and you want to turn over  -
subcontract -  the whole operation and responsibility for the bar to
another party.
Something like that?
In that situation, I would want a good share of the income if my
establishment was drawing customers that used the bar.  But maybe not,
if I or my organization had strong convictions against drinking but
recognized that a bar was a necessity for the establishment.  (Can?t
really envision the situation, though  - maybe a church that inherited
a property ??)
I expect that the subcontracted party would have to be the holder of
the bar license.
Please clarify.
