I'm looking for current casual dining menu/food trends - with an
emphasis on Europe.  This would include flavours, cooking styles and
food presentations. Think Chilis, Applebees, local equivalents.

Dear Stew, 

I encountered several problems giving you the answer, and I would like
to share them with you, for you to decide if I should go ahead and
post an answer:
(1) There are few tools discussing current menu trends, usually
however not in a global scope, or that their conclusions are very
"general" when referring to global trends. Naturally, people in the
UK, Saudi Arabia and Brazil don't eat the same food.
(2) Most of these sources would require further fee for you to read
them toroughly. That means, that my answer would include very few (if
any) free sources, and most of it would be sites or databases for a
fee.
(3) Regarding casual food in Europe, chains like the ones you've
mentioned are much less popular in continental Europe, and "casual"
places are usually not part of huge chains (but privately owned family
restaurants). That has also an impact on manu trends - it is much more
difficult to put the finger on manu trends that would be common to
such restaurants.

Well I'm not going to try and answer your whole question, but I would
like to say that across the world fish and other seafoods are becoming
a lot more popular.  This is driven by research and diets mainly, but
also in taste.
