Thank you for this interesting question! Here's the "dish" on restaurant expeditors. Basically, they "expedite" the food through the kitchen, and are a link between the guests and the waitstaff. They may help dress the plates, take finished orders from the cooks for the waitstaff and garnish them, and generally make sure that everything in the kitchen is running smoothly, to give the waitstaff more time with the diners. They are used in just about any size kitchen, but often only during the busiest times. Dinersoft Restaurant Lingo http://www.dinersoft.com/lingo.htm From the Dinersoft web site: "Expeditor ("Expo") Person in charge of organizing food from kitchen and sending to the dining room. "Who's on expo tonight?" Cuisine Net http://www.cuisinenet.com/digest/custom/restaurant/chef_ladder.shtml Scroll down for a detailed reference on Expeditors. Restaurant Report http://www.restaurantreport.com/qa/crowdcontrol.html The second answer to this question has an excellent definition of an expeditor. The Cheesecake Factory http://www.thecheesecakefactory.com/employment-rest.html From the Restaurant Positions section of the web site: "Expeditor: To maintain high standards of food quality that guarantees guest satisfaction by ensuring perfect food within the proper time frame. Ensures all products are prepared to CFI recipe through the organization and completion of orders with accompanying items and sauces."
