I am looking for a definitive resource (hopefully free or inexpensive)
that can provide the following food service industry statistics: food
cost by segment, labor costs by segment, spanish speaking employees by
segment, inventory theft/shrink/waste by industry segment, average
check by segment, average customer transaction time by segment, type
of payment methods by industry segment. Segments would be quick
service, fine dining fast casual, and institutional as well as any
others. My company sells point of sale software hardware solutions and
I'm trying to define some of the problems we address.

The National Restaurant Association is the only group I know of that
routinely collects data of the sort you're looking for, though I doubt
even they have it broken out in as fine a level of detail as you're
asking.

Most of these are for sale, though some of them are summarized in press releases.

I should have stated that I had already been on NRA site most of
morning trying ot get at what I wanted.  I was hoping an independent
accounting firm or consulting firm would have compiled such
statistics. The reports that NRA has are from a variety of different
years as well. There used to be some accounting firm many years ago
that specialized in restaurant accounting statistics.
