For most EU countries, you have to have a valid visa or work permit to
stay in the country. Canadians travelling to Greece do not have to
have a visa if you stay less than 3 months. If you plan on staying
longer than that, you'll probably need to have a work permit. Here's
some information I found on the Canadian Embassy in Athens site:

How long may I stay in Greece as a tourist?

You are allowed to stay 90 days from the date of entry. If you wish to
stay longer, you must contact the nearest Aliens Police office and
request a temporary extension.

What if I wish to reside or work in Greece?

If you wish to become a resident in Greece you should apply for a
residence permit at the closest Aliens Police office in Greece or
contact the Greek Consulate in your country of residence.

In order to work in Greece a job offer is necessary. Before your
arrival in Greece your prospective employer must apply for your work
permit at :

Athens Prefecture
Direction of Employment
Pireos & 2, Voulgari strs (2nd floor)
104 37, Athens

tel. 30-210-5238268
fax 30-210-5227897

Exceptions for work permits according to existing regulations :

individuals having some connection with Greece (married to Greek
citizens or by Greek descent). Especially, a spouse of a Greek citizen
may obtain work permit after two years from the marriage date or
immediately if the couple have a minor child; the work permit is
obtained by the Aliens Police.
Canadian citizens working for companies that have head offices or
branch offices in Greece (shipping, commercial and manufacturing
companies) without having commercial activity in Greece (LAW 89
companies) apply for work permit at the Aliens Police.
Canadian citizens working for tourist offices apply for work permit at
the Aliens Police.

Hope that helps!
