can recessed lighting trims be used on another manufactures housing
(ie can you mix/match housings/trims)?   If so, is there some master
chart/guide somewhere ith this compatibility information?

Yes & No, some are so compatible, they're like photo copies of each
other, while others are so different they are like night and day. Now
even though some may fit perfectly you may not legally be allowed to
use them, most have a UL approval (or equivalent) stateting that the
unit is approved if used only with such & such trim. Therefore
electrical inspectors may not approve your job.
