How many commercial farmers are there in each country around the
world? Commercial is to be defined as the number who produce 80% of
the food and fiber grown in the country. For example, in the US the
Dept. of Ag. says we have 2.3 million farmers in the US, but only
65,000 of those grow 80% of the food and fiber.

Your question is about to expire without having been answered, and you
might be disappointed. One possible reason for that is the pricing you
put on your question. While $25 is sufficient for many questions to be
answered on Google Answers, it is possible that it is not enough to
answer a question like yours. I have attempted to locate a database
that would contain such information about all of the countries,
without success. That means, that this information have to be probably
collected by country: given the number of countries in the world, and
the fact that each has to be checked, this would take much more than
the time usually associated with $25 questions.

By the way, I think that your assumption that there are "commecial
farmers" all over the world is problematic. Commercial farming relies
on certain market structures that may not exist in many countries,
especially Third World ones. It could be also limited to some
centralised sectors (e.g., coffee crops) and not to all crops.
