what sports bets do bookmakers make most profit on - ie as a
percentage of their profit do they make most from eg laying favourites
or laying outsiders; do they make more profit per unit bet from golf
or horses or football?

Sport discipline vary from country to country, I'm almost sure, that
in Europe football is the most profitable thing. If you are still
interested in receiving full answer you can make new question and I
could try to answer it (but I would need about 2 weeks for it).
