How do you change hard drives "safely"?  How do I know what is
absolutely essential to back up on disks?

Are you talking about physically changing hard drives?  You want to
transfer all of your data from your existing hard drive to a new one? 
Are the drives internal, external?  Providing info such as this would
help answer us your question more effectively.

could know what is "essential" or not.

Could you let us know if you just want to change the hard drive, or if
you're willing (or able) to add a hard drive. There are different
methods that are available depending on which option you are taking -
adding a hard drive or simply replacing.
