I have a dilemma.  I wear polo shirts to work and ususally buy from
Lands End or Gap because I've found they stand the test of time with
washings and come out of the dryer wrinkle free, no iron - YEAH!

However, I cannot stand so much of my undershirt showing while wearing
the polos.  The way the two buttons are arranged allows for too much
space between my neck and the shirt.  Wearing an undershirt is a must,
I am a heavy sweater and the undershirt hides things that shouldn't be
seen.  V-necks are not an option because the V on all V-necks I've
tried are too low and show chest hair, not to mention it screams that
you are wearing a V-neck through the polo.

Aside from taking all my shirts to a tailor and having the buttons
moved up a bit, is there easy solution to shorten the gap, aside from
a little hem tape which I've already tried and it is a mess.

It is generally thought to be desirable that one's crewnecked
undershirt should be visible when one's polo shirt is worn unbuttoned.
Do I understand you to say, however, that your undershirt is visible
even when all the polo-shirt buttons are fastened? This would indeed
be problematic.

No, it's a two button polo shirt which I've found to be the norm among
the better ones.  The lowest button is buttoned but the top is not. 
When the top button is not buttoned, too much undershirt is showing. 
If I button the top button, I look like a geek who lost his slide rule
and pocket protector.

I think the solution is to buy undershirts with a larger neck hole.

Larger neckhole would not be the solution because then the entire
shirt is bigger.  I'm already XL, if I buy an XXL the t shirt sleeves
would probably extend past the short sleeves of the polo shiirt. 
Stretching the shirt to make a larger neckhole would just make the
t-shirt invisible, just pulled, worn-out and sloppy.

What about tank tops? They tend to have a lower neckline.

The shirts are OK.  Leapinglizard was right in his first comment.  You
do want the undershirt showing.

Have you tried just stretching the neck of the T-shirt when you put it on?
Maybe cheaper T-shirts would be more amenable to this solution,
or as L-L-ga suggests, another brand with a larger neck hole.

How about V-neck undershirts?  (as much as I dilike them for myself)

Just a thought but you could have the undershirt cut and stitched to
your specifications.  A taylor shop could do it or anyone with a
sewing machine.  It's an expense but a solution.

Two Cheap solutions: !.) is to use one to three safety pins to scrunch
the T-Shirt down a bit, DO Not Fasted to the polo.  Insert the safety
pin into the T-Shirt about one to two inches below the neckline and
pointing it downwards gather up about two inches of fabric and pin in
place.  It will pull the neckline down.  If you did only a single pin
in the center it would make the T-shirt into sort of a V-neck shape.
You might need to use three pins to get it right.  You could leave
these in during the wash and dry to.

2.) is to get yourself a pair of pinkining shears.  These are special
scissors that will cut the fabric and not let the edges frey.  The cut
looks like a zig zag.  I would try two variations: one where you cut
off the entire binded neck-hole, and the other where you just snip a
single slash straight down from the front of the neckhole. then you
could use fabric glue to tack back the two flaps you just created.  It
will not frey. You do not have to sew. and it will not show through
becasue it will not have a binding.

I think the last one is the winner. Let me know.
