I need the name of three "famous" chefs who are also health conscious
(and you get an even bigger tip if they are also a gardener too!). I
need chefs who are engaging and famous (Emeril)... or up and coming
(Alton Brown), but who focus more on the nutritional and health value
of food/cooking than on the mere display and presentation of the food.

Hello deeper,

Below are the results of my research for three famous chefs who are
health-conscious in their approach to food / cooking:

================
Juan-Carlos Cruz
================

"Recently, Juan-Carlos appeared on the premiere season of the
Discovery Health Network?s Body Challenge for six episodes. On the
program, Juan-Carlos lost a total of 43 pounds with an additional 17
lbs lost after the show wrapped. After his appearances, Juan-Carlos?s
attitude towards food altered as well. He began running Calorie
Commando Catering with the mission of providing the best heart-healthy
food in Los Angeles. Juan-Carlos still runs Pastrydude and teaches at
the Chefs Inc School of Culinary Arts in West Los Angeles, where his
classes include pastry, bread making, advanced cooking techniques, and
healthy "spa" cuisine."

==================
Kathleen Daelemans
==================

"When it comes to healthful cooking and eating, Daelemans is "her own
best advertisement," having lost 70 pounds when creating a new
regional cuisine for one of the world's most luxurious five-star
resort and spas, The Grand Wailea, in Maui, Hawaii.
...
The wholesome cuisine Daelemans features on her menus has won her a
special award from the Hawaii State Senate as well as a devoted
clientele."

Not quite a gardener but,

"...Daelemans is deeply commited to developing and strengthening
farmer/chef relationships and emphasizing locally grown, organic, and
seasonally fresh foods."

food advocate..."

"Curtis is also a regular cast member of ABC's Good Morning America,

Again, not a gardener but has been in the produce business for fifteen years:

"A native Georgian, Curtis' attraction to produce began as a small
boy, as he followed his Grandfather Curtis through the garden. His
interest grew during high school, when he worked at the Conyers,
Georgia A&P Market. "I was supposed to be in the grocery department,"
he recalls, "but I hung out in produce because that's where all the
action was." His enthusiasm soon became a career."

pursue her other passions, writing and gardening."

and Sunset Books."

The first person that popped into my mind is Alice Waters of
Berkeley's Chez Panisse. She was the main pioneer in changing the way
America eats. Her current project with The Edible Schoolyard is her
attempt to bring healthful eating and nutrition education to children
so it will transform their approach to eating. She is the foremost
evangelist for health cosncious food preparation and eating.

The Edible Schoolyard

The Edible Schoolyard, in collaboration with Martin Luther King Junior
Middle School, engages 950 public school students in a one-acre
organic garden and a kitchen classroom. Using food as a unifying
concept, students learn how to grow, harvest, and prepare nutritious
seasonal produce. Experiences in the kitchen and garden foster a
better understanding of how the natural world sustains us, and promote
the environmental and social well being of our school community.

Alice Waters by Ruth Reichl

Alice Waters lies in bed at night worrying about what to feed you. She
knows that she can make you happy. She also knows, in her hidden
heart, that if she can find the perfect dish to feed each person who
comes to her door, she can change the world.

Every great cook secretly believes in the power of food. Alice Waters
just believes this more than anybody else. She is certain that we are
what we eat, and she has made it her mission in life to make sure that
people eat beautifully. Waters is creating a food revolution, even if
she has to do it one meal at a time.
