Can you find a recipe for Mike Didka's pulled pork sandwiches or any
good recipe for pulled pork sandwiches

I see at Mike Ditka's Chicago website he has a:

The recipe that stood out for me is:

PORK PULL SANDWICHES

5 lb. pork butt
Salt and freshly-ground pepper, to taste

Season pork with salt and pepper. Smoke over hickory at 225ºF to 250ºF
for 8 to 10 hours.

Let pork cool slightly. Pull the meat apart with a fork. Chop it up
slightly and pour marinade over it. Allow it to rest for 1 hour. Mix
the meat up thoroughly. Put cole slaw on a soft white roll, then add
pork pull. Cover with top of roll.

Marinade
1 qt. cider vinegar
3 chipotles, chopped
4 garlic cloves, minced
2 T. black pepper
2 T. salt

Mix all together and let stand overnight.

As to whether the above are good recipes, that is a matter of personal
taste. For me, if it is a sandwich, with lots of butter, and contains
meat which is dripping in fat (bacon, lamb, beef, chicken…) - I will
be in delight for 5 minutes, and then in disgust for the next hour...
I hope one of them fits your idea of a great sandwich. Please ask for
a clarification on any aspect of this answer.

Please "transport" the pulled pork sandwiches, described in your
answer, to the CD drive on my computer....Leave off the barbeque sauce
since it might clog up an electronic thing-a-ma-jiggy....
