I watched a movie on I believe it was the sci-fi channel back some
time in the late 90's and remember only some of the occurrences within
the movie.  From the beginning there is a family looking for a place
to stay, and they come up on there great uncle, or grandfather of a
sort.  The family eventually tries to find a way out of the twisted
house/mansion and come to find a rollercoaster made of bone in the
back yard.  The only food they can eat is sausage, and some sort of
tidbits the old man eats, and this is all he seems to eat.  This is
all I can recall from the movie, I know not the title or the actors,
and in turn these are what I am after.

I am fairly certain that you and I are thinking of the same movie so I
am posting this as an answer:

I think the movie you are referring to was not a horror movie, but a
1991 semi-dark comedy called, ?Nothing But Trouble?, starring Dan
Aykroyd, Chevy Chase and Demi Moore (the cast is largely made up of
former Saturday Night Live regulars, their relatives and former SNL
guest hosts).

?A financier [Chevy Chase] meets a spurned lover [Demi Moore] and
agrees to take her to a business meeting. On the way there, they run a
stop sign in a tiny town in the middle of nowhere. They are arrested
and taken to the local court. But all is not as it seems: the
courthouse and the "prison" [actually located inside the Judge?s
creepy mansion] are a maze of zany booby- traps and deadly
contraptions [this strange ?roller coaster? in his backyard that you
remember that had piles of human bones all around it from the
?Judge?s? earlier victims. At the end of the line was a sort of
?grinder? manned by the Judge's sons - a couple of deliverance-type
hillbilly idiots.]. The antics of the captured couple as they try to
escape from the mad judge [Dan Aykroyd] and his bizarre family make up
the rest of this unusual film.?

Incidentally, the Judge called the roller coaster ride "Mister
Bonestripper" and the cars delivered the riders to a flash stripping
machine. This of course accounts for the "sausages" you remember Judge
Alvin "J.P" Valkenheiser eating in the movie.

Trivia:  

Some of the actors had dual roles, portraying other characters in
costum eof heavy makeup.

Dan Akroyd's brother Peter not only had a bit-part in this movie [he
was "Mike the Doorman"] but he is also actually the one who wrote it.

sorry....should have been "FLESH stripping machine" rather than "FLASH
stripping machine", but I'm sure you caught my meaning.

Bingo! Holy crap, ive been looking in the wrong place for 8 years.  I
feel foolish for lookking in the wrong section for this movie, its
been plaguing me since the late 90's as to what the movie was, at one
point i recall searching to find Jack Nicholson's creations and a fiew
other actors that in my mind would have been able to place the "old
man" in this movie.  5 stars and a tip for the haste you were able to
make on such a vague discription.  Thank you so much.
