This turned out to be a more complicated question than I expected!

The song as most people know it was written by Heinrich Albert, as for
example at:

but apparently the first version was by Simon Dach in niederdeutsch -
and had a full seventeen verses.

"Das Lied "Ännchen von Tharau" wurde 1637 zunächst in samländischer
Mundart (Ostpreußen) von Simon Dach (1605 - 1659) geschrieben ('Anke
von Tharaw'). Die ersten beiden Zeilen lauten im Original: Anke von
Tharaw öß, de my geföllt, se öß mihn Lewen, mihn Goet on mihn Gölt.
Die Melodie schrieb ursprünglich Heinrich Albert (1604 - 1651) dazu.
1778 übertrug J.G. Herder das Lied ins Hochdeutsche ('Ännchen von
Tharau') und im Jahr 1825 komponierte Friedrich Silcher eine neue
Melodie, die heute wesentlich bekannter ist als das Original von
Albert."

By the way, my search strategy was to try out different versions of
the spelling, substituting an "e" for the umlaut, for example.

Couldn't get it on Google search. We do have some German researchers.
They should be able to find it out
