Depends what you consider a restaurant, of course. Is McDonald's on the list?
I checked a database of the Restaurant and Catering Australia, an
industry association. They list 2116 restaurants in NSW (McDonald's
and other takeaway eateries not included). I looked at about the
first 100 restaurants listed, and they all accepted reservations --
100%!
Would more details about the Restaurant & Catering database meet your
needs? If not, please let me know what additional sorts of
information you're looking for.

Thank you for your question. McDonald's would not be on the list. If
you called McDonalds and asked for a reservation they would say "we
don't take reservations". I guess what I am trying to imply in the
question is that reservations are recommended by the restaurant if you
want to go there for a normal meal or, they frequently take
reservations (as in most days).
Most restaurants that don't normally take reservations would likely
answer the question "do you take reservations" with an affirmative
answer, that being said, many of them are "walk in" type places that
rarely get or require reservations, but if you were to call them they
might say, "you don't need a reservation, but we'll take it". I do
not consider these to be reservation taking restaurants in my
definition. My definition is: Restaurants that normally recommend or
require reservations for admittance and restaurants that maintain a
reservation book.
Keep in mind that NSW is a larger area than I am looking for as well.
I am looking for the number of this type of restaurant in the Sydney
area. This should include the suburbs, but not the entire state. In
terms of US cities, includes the county of a city, but not the state
(I'm not sure if Australia has counties). If you can only get the
data on a Statewide level, I would accept that if it included a list
of restaurants with location. (this sort of implies that you could
get get the answer from the list if you new the city names of all the
suburbs of Sydney). I'm happy to figure it out from there if you can
find that info. Also, if you find the number of locations where the
city name is "Sydney" without the suburbs that would work as well.

Thanks...I see what you're after now.
The best list I could come up with is probably from the source I
mentioned earlier, Restaurant and Catering Australia. Their list of
member restaurants can be sorted not only geographically, but by type
of cuisine, cost, size of the restaurant, and even specific practices,
like smoking areas, BYO alcohol, etc.
Looking at the Sydney-area restaurants, I come up with the following
numbers, all of whom accept reservations:
SYDNEY CBD...............344
SYDNEY EAST..............118
SYDNEY INNER WEST........140
SYDNEY NORTH SHORE.......150
SYDNEY NORTH WEST........100
SYDNEY NORTHERN BEACHES...93
SYDNEY SOUTH..............99
SYDNEY SOUTH WEST.........14
SYDNEY WEST...............93
For each of the above area, you can access the list of restaurant
names and addresses, as well as other information about the
restaurant.
Would that meet your needs?

I've looked at that site before. I didn't find anything that
segragated sites based on my definition of reservation taking. It is
very possible that you found somthing there that I did not see though.
Based on this definition:

admittance and restaurants that maintain a reservation book.
Did you find somthing that specifically segrigates the type of
restaurant based on reservation taking? I think all restaurants
listed showing reservation ability does not work. Logically all
restaurants in a given metro don't take reservations and the site says
specifically here http://www.restaurantcater.asn.au/profile.asp that:
As at May 2005, the State Restaurant & Catering Associations, that are
members of Restaurant & Catering Australia, had around 5,043 members.
These members range from large catering companies to small suburban
restaurants.
This would include sites that I don't want in the data (Catering
companies and non reservation taking restaurants).

After looking agian, I noticed that I've seen the site that lists the
restaurants that you are using. It does segregate catering operation
out, but it does not functionally segregate the restaurants into the
two groups I am looking for. Each site does show a "book now" link,
but its not real booking link, rather its either a page to email the
restaurant or its a Voice over IP phone link to call the restaurant.
So really the "book now" link should read "contact now". There are
many restaurants listed on this web site that don't take reservations.
Example:Longrain Book now
Please note that Longrain does not take bookings.
I think you will have to find a study on Sydney restaurant to figure
out what I am looking for, or go through all 1151 restaurants listed
on this site and segregate them although i find this an unlikely and
time consuming option.

Longrain does appear to accept bookings, but only for lunch.
