When canning pickled asparagus, a grey or yellow substance called
rutin forms on the asparagus spears. I have heard that adding a small
amount of tin salts in the processing can keep the rutin from forming.
I want to know how much tin salts should be added to 8 gallons of
brine and where I could purchase food grade tin salts.
