I'm searching for an authoritative (from a well known and accredited
scientific source) and detailed (at least 2 pages long...) scientific
article that explains how do scientific nutritionists establish the
right/best quantities and kinds of nutritive elements humans must
take.

I'll add a tip of $5 if you also find an article with the above
requisites that explain when it's better to take fruits (ex. before or
after meals) and why.

Note 1: the language must be english or italian
Note 2: you can search and find them on books in Google Print or A9
too, if the above reqs. are respected

The lenght is not a problem if it's for more details and well
structured as that book seems to be.
As answer I'ld accept that you indicate to me the specific page range
or page ranges of that book (or other similar books) that answers,
even in difficult terms and in rational way, to the question: "how do
scientific nutritionists establish the right/best quantities and kinds
of nutritive elements humans must take" for well living.
