I am trying to find the name of a band which had a CD in 2000-2002
timeframe which I thought George Harrison made a guest appearance on,
or I read somewhere that he liked the band. My recollection is they
were not from the States, possibly Ireland and drew some comparisons
to U2. I thought the name was something like Steeplehorse,
Silverhorse, (something)horse, (something)steeple or some variation.
Anybody know?

I am certain that you're thinking of the band "Rubyhorse."

"And, in 'PunchDrunk' they have also achieved a milestone that no
doubt has many a band drooling - that track features a guitar segment
performed by George Harrison of The Beatles."

Mode Weekly: Rubyhorse at the Whitaker Center

"(6/21/02, 1 p.m. ET) -- Rock up-and-comers Rubyhorse are sharing the
stage with Beatles legend George Harrison as they tour the country
supporting their Island Records debut album, Rise. When the group
performs its song, 'Punchdrunk,' it incorporates into it a tape of the
part the late Beatle contributed to the album version."

Yahoo! Music: Rubyhorse News
http://music.yahoo.com/read/news/12060748

"...an unknown Boston band who had managed to score one of the biggest
guest appearances a band could ever manage to get, in the form of
ex-Beatle George Harrison. Harrison's studio output had been
relatively stagnant since the second Travelling Wilburys album in the
late 1980s, and, as we'd sadly learn over a year later, there was good
reason why Harrison had been quiet in recent years. But this marvelous
ballad, 'Punchdrunk', showed us that Harrison still had the chops, and
also that this group of nobodies called Rubyhorse had some big-time
potential... At long last, Rubyhorse released their debut album in
the middle of 2002, and that collaboration with Harrison now feels a
bit more significant."

The track with George Harrison is "Punchdrunk," on the album "Rise":
