Eugene Levy's character in "American Pie" doesn't really have a name.
He's simply known as "Jim's Dad." This is verified by Eugene Levy:

character's first name was supposed to be Noah:
"In the 1960 spaghetti westerns that helped turn him into an
international star, Eastwood's character was the man with no name. The
same is true of the befuddled father Levy plays in the American Pie

Then again, there's yet another alternate name for Jim's Dad. This one
was created by the screenwriter:
"Jim's dad's first name was never defined as it was never used. In the
bonus footage where the writer explains some unanswered questions, he
invents a name for Jim's dad, calling him Bullwinkle."

In view of all this, I think it's fair to say that, strictly speaking,
in the original film "American Pie," the character has no actual name,
and is called only "Jim's Dad." The name "Noah Levenstein" was given
to the character in the sequels.
