My boyfriend, at the time, and I purchased a Time Share in Orlando,
Florida, 2001.  Now we are not together and he has agreed to sign the
Time Share to me.  Currently, both of our names are on the deed. What
paper work do I need and How do I go about changing the deed to have
only my name, thus me being the sole owner?

It is called a quitclaim deed  (he quits his claim on the property).
Here are three sites that should help you.  On a Q&A site, an often
related question was about the mortgage.  If you have one, the matter
will probably be more complicated.
