is there a site which archives websites and changes in those sites so
that I can access them to view the how websites have advanced over the
years?  For example, I would be able to access the HP website from 5
years ago, then 2 years ago and 1 year ago.

The answer to your question is yes, there is a site which archives 
Websites. 
“The Internet Archive Wayback Machine puts the history of the World
Wide Web at your fingertips. The Archive contains over 100 terabytes
and 10 billion web pages archived from 1996 to the present.”

To start using the Wayback Machine to surf the web as it was, just
type a URL (a web site address) into the box, click the Take Me Back
button, and start exploring the past.

For example, I typed in http://www.hp.com, and clicked on the “take me
back” button. There were 598 results.

Thank you for your help.  The sites that you gave me were exactly what
I was looking for.  They will be very helpful in my class.  My
students feel that the Internet has been around in the present form
for all time and forget when a site changes or disappears.  Thank you
again.
