I have had fresh goose eggs in France just recently and they are
delicious. I would like to know where can I get goose eggs for
consumption in California once they?re in season (I?m Los Angeles
based) or even from another state (if they can ship)? I?ve already
tried some farms I found online and they all just sell them cleaned
out for decoration or cannot ship them across state lines, so it
appears to be not that simple.

Hello, netbankers-ga!

 I haven't tried goose eggs, but I certainly like duck eggs. You might
want to try those as well.

 I found a few sources that should work for you, but I would also ask
around at your local health food stores and food coops. They often
know the local farmers who are selling organic eggs of all kinds.

"Inside our Country Store we often have fresh goose eggs for sale
between the months of January and July. Geese do not lay eggs year
round and peak production is usually between the months of March and
May. Call us or come by to see if we have any."

"Goose eggs can be substituted for chicken eggs in most recipes, and
are considered by many chefs to be the best eggs for baked goods.
However, the albumin is firmer in goose eggs than in chicken eggs so
they do not whip as well."

Farmer's Markets are a good place to guy Goose Eggs. 

The following articles suggest the farmer's markets in Vista, Palos
Verdes, Torrance and Berkeley.

be found at the larger markets. (Even ostrich eggs--albeit empty
shells--were on sale for $15 each alongside ostrich meat at the Santa

of duck eggs, and had a lone goose egg left, less than an hour after
opening time at the market in Vista one recent Saturday morning."

actually eat them, he says."
