I am trying to find the name of an animated movie I watched as a kid
(around 20 years ago).  The only thing I remember about the movie was
at the climatic ending the main bad guy fell/thrown off his large dark
castle and was impaled on a spire on a roof below.  He did not die,
but transformed into a massive demon looking monster that erupted out
of his castle and was a couple hundred feet tall.  He had a large
protruding lower jaw with two tusks sticking up from it and had two
large horns on his head.  He was clad in a black cloak/robes.

The hero/heroine (it may have been a female character but I'm not
sure) shot toward the villan (the hero could fly, but I don't remember
if the hero was human or some other creature) and the demon could call
forth volcanoes/etc. to try and stop the hero, but as the hero
sped/flew toward the demon he/she called forth a blinding white light
that distracted the demon and the hero shot right through the demon's
chest killing it.

And that's about all I remember about the animated movie.  It may have
been a Japanese anime, or very much influenced by that type of
animation.  I've been trying to remember the name of this movie for
awhile now.  Any help would be appreciated

I believe you are remembering the 1981 Japanese animated film "The
Fantastic Adventures of Unico."

Does this sound familiar?

"One day, Katy is singing by the river, and a beautiful man asks her
to come and sing at his castle. She is delighted! The next day she
sneaks out, and accidentally eats an enchanted strawberry, which puts
her in a trance. She goes to the Baron's castle. Unico follows her. He
goes to fight the Baron, and the Baron is impaled (gross) on a spire.
He then turns into a huge demon, and sends a river of fire and lava
after everyone."
