I believe the quote you are looking for is: 

"Every surgeon carries about him a little cemetery, in which from time
to time he goes to pray, a cemetery of bitterness and regret, of which
he seeks the reason for certain of his failures."

This is a quote by René Leriche (1879 - 1955), a French surgeon. He
wrote this in "La philosophie de la Chirurgie." Pt. II, chapter I. The
above translation is by Roberta Hurwitz.

I was unable to find the French version of this quote online, but I
can continue looking if you wish.

Another interesting tidbit is that the Rene Leriche Prize, the highest
honor of the International Surgical Society, is named after him.
