I have a recipe of baking a bread with more nutritous and tastier
ingradients than pizza. I would like to explore it as a pilot,
sampling and eventually building a commercial outlet. Any tips/leads
on where to begin?

A friend of mine did quite well by selling her baked goods at a flea
market. That might be an inexpensive way to find out whether people
like your bread.

Farmer's markets often include baked goods and other "homemade" items
(in addition to fruits and vegetables). If there is a farmer's market
near you, that might be worth checking out as a place to test-sell
your product.
