what cheese goes well with Silver Horse Cabernet?

There is no hard and fast rule for pairing wine and cheese. 

Generally Cabernet is paired with aged hard cheeses, and a convenient
protocol is to match the country of origin (i.e. Croatian wine with
Croatian cheese).  Cheddar is often matched with Cabs, and is one of
my favorite employments of that ubiquitous (in the US) cheese.  Feel
free to try Parmesan or Gouda, but I am going to suggest Cypress Grove
Cheddar, which is a fantastic California Goat Milk Cheddar.

I have not tried the Silver Horse Cabernet.  I have tried many central
coast cabs and they vary greatly.  I suggest calling them and asking:
