Since we have no idea how old you are, "when I was young" doesn't
narrow things down much! Approximately when did you read the book? Any
additional clues may be helpful.

Hello.

You're probably thinking of "Elephant on Wheels" (1974) by Alida McKay Tacher.

"Petunia the elephant loved to roller skate."

Also see Amazon.com:

"This 1974 Little Golden Book Eager Reader series book is delightful.
Petunia, the youngest in a family of elephants who speak and live in a
house, is an avid roller skater. Her parents think it unseemly for an
elephant to skate and in turns, each family member hides Petunia's
skates in some secret place but next day she is back skating again."
