Wood Floor Cleaning & Grease Control
I have several wood floors in our upscale restaurants. Any suggestion
on what cleaning product to use on the wood floor? Also, how to keep
the cooking grease in the kitchen and not tracked onto the dining room
wood floors?

For cleaning the wood floors I suggest you try Murphy Oil Soap
http://www.colgate.com/app/MurphyOilSoap/US/Home.cvsp it does wonders
on wood and leather, easy to use and does not strip away the finish. 
Keeping the grease from the kitchen in the kitchen requires constant
diligence.  I ran restaurants for years and we used an indoor-outdoor
floor mat that is made of natural fibers:

 These can be purchased at any retail outlet and even home improvement
centers. They can be turned over for extended use, but, should be
thrown away once saturated with dirt and grease.  Life can be extended
a little by rinsing with very hot water and a good degreaser from any
restaurant supply house.
