I am looking for the name/author information for a novel.  I read this
book about 15 years ago, but I can't remember the name.  The book
tells the story of a baby who is abandoned by his mother in a field or
a forest and found by a monk/priest.  The child is taken in and raised
in the monastery.  The child either grows up to become a builder of
churches or meets his father who is a builder of churches. The book
was set in medieval times rather than modern day.

Any help is appreciated

Could this be Ken Follett's "Pillars of the Earth"?

Many of the details sound like the "Heaven Tree" trilogy by Ellis Peters

However, some of the details don't match, so this may not be correct.
