Where can I find examples of keynote speeches given during a Medical
Students Oath ceremony (at the ceremony for their Oath of Maimonides
or for their Oath of Hippocrates).  I am NOT interested in the Oath
itself or in any prayer given at the ceremony.

I could only find full examples of two speeches, but I think they
should give you a good idea of what to expect:

In addition, it might be useful to contact the School of Medicine of a
University that you feel resonance with. They may have records of the
speeches and be willing to fax you copies.
