I have grown my own yellow squash this season - and they came in and
are HUGE.  what do I do with them now?  Need good baking / dinner 
tips.

Mmmmm, yellow squash from the garden. Great stuff. Tasty, nutritious,
and often so plentiful that one ends up giving away lots and lots of
goodies to friends and neighbors! Here are a dozen suggestions from
the Web for a variety of tasty-sounding things you can do with your
harvest of squash. I have not tried all of these, so I can't give a
personal evaluation; later on I will give you a couple of yellow
squash recipes that I like to prepare for my family.

Lastly, as promised, here are my own family-pleasin' squash dishes. I
am a Southerner, born and raised, and both these recipes have several
generations of Southern know-how behind them. Even picky children have
been known to enjoy these two recipes, especially if you don't let
them know that this stuff is good for them. If you want to try a
vegetarian version of these recipes, you can easily substitute
margarine for the grease and use crumbled Veggieburgers for the
sausage.

Pinkfreud's Special Squasherole

2 average sized yellow squash
1/2 teaspoon salt (optional)
4 tablespoons light brown sugar
8 ounces mild ground sausage (Jimmy Dean brand is very good)
1/2 cup bread crumbs or crushed cornflakes

Cook and stir the sausage until nicely browned and crumbly. Drain the
sausage grease and conserve. Wipe the squash clean, cut it in half and
remove the seeds. Place the four squash halves in a baking dish;
drizzle about a quarter-cup of sausage grease over the squash. Combine
cooked sausage with salt, brown sugar and bread crumbs; sprinkle this
mixture over the squash. Bake, uncovered, for 40 minutes at 400
degrees. This makes a nice side dish for four people, or a meal for
two.

Pinkfreud's Special "Okrahoma" Squash for the Grill

2 small yellow onions, sliced and separated into rings
3 average-sized yellow squash, cut into bite-size pieces
1 cup okra, fresh or frozen, cut into bite-size pieces
2 tablespoons lard or bacon grease (margarine will do, but is not as
tasty)
1 clove minced garlic
1 teaspoon salt (optional)
1/4 teaspoon ground black pepper
1/2 teapoon crushed dried thyme or summer savory herb
1 tablespoon lemon juice
1/4 cup grated cheese (cheddar, parmesan, Monterey jack are all good)
Large piece of heavy-duty aluminum foil, at least 24 inches long

Place onion slices, squash, and okra on the large piece of aluminum
foil. Drizzle the lard, bacon grease, or margarine over the
vegetables. Sprinkle with the garlic, salt, pepper, thyme, and lemon
juice. Fold the aluminum foil together and seal the edges tightly.
Place the filled foil packet on the grill (or under the oven broiler)
for 30 minutes, turning the packet over once. When ready to serve,
open the foil and sprinkle the cheese onto the hot veggies. Serves two
to six people, depending on how hungry they are and how much they like
squash and okra.
