Hi there

How about a company simply called "Josephs Lite Cookies" in Deming,
New Mexico, minus the St. part?  They seem to do a mighty fine cooky
so I'm just going to take the chance it is the one you want?

The company "Josephs Lite Cookies" was founded by Joseph Semprevivo,
who at age 12 introduced the first sugar free ice cream to market.

They also seem like a good company to work for.  - "All products are
produced in a 44,000 sq ft factory, located in Deming, NM, USA. The
cookies, snacks and syrups are sold nation wide and in fourteen
countries. Joseph's Cookies is a socially Responsible Company that
offers lifetime employment for its dedicated Team Members as well as a
401k, health benefits, paid vacation, perfect attendance bonuses, and
production bonuses."

They certainly collect the awards as well - From the "NFDA All-Natural
Product" and "FDM All-Natural Award" to the "American Success Award
presented by President George Bush at The White House Rose Garden."

From this website simply called "Fat Free Cookies," you will find they
also are known as "Santa Fe Farms."  The text does not mention if
Sante Fe Farms is a label owned by Joseph's or whether Joseph's
'private labels' for them, but either way, the product in the package
is from Joseph's Lite Cookies.

The next thing is a text blurb from the Albuquerque Tribune.  The
statement was mady by Penny Smith, a Pepperidge Farm distributer - 
"We tasted a Joseph's cookie, a cookie made in Deming for diabetics
that actually tastes good, and decided that we could distribute
it,"..."

All in all, they sound like a pretty good company.  And if you want to
Canonize them by putting a "St." in front of the name, it is fine with
me.
