I am looking for a site that sells a product you can add to wine,
water, etc. that removes sulphites (regarding wine) and purifies
drinking water. I found the site a few months ago and I think it is in
California, Washington State or Oregon. The product was as I recall
was in a tablet type form and could be dropped into the wine or water.
I am mildly allergic to the sulphites and can drink organic wine
without the allergies, but would like to be able to have the choice of
regular wine too. Also, the product would be great to have for

Greetings!  For some reason, I found more information using the
spelling "sulfite" than "sulphite".  I have tried numerous variations
of "remove" and "neutralize" with both sulfite and sulphite but have
not yet discovered an actual tablet that makes it happen.  If you
could clarify a bit further on all that you recall of the tablet, it
will help greatly.  I am continuing to search, but I wanted to share
information I found about wine companies offering no-sulfite wines and
water purification systems that remove sulfites.

I located Eddipure, a company that makes a water purifier which
removes "Alcohol Hydrogen Sulfite" in its process.  This company is
located in Virginia.  From their text, and the text of EmPower, I
discovered the term "reverse osmosis" as the purification method. 
Searching that term, I also located the Great Water company, and I
found some text in a report from a College of Agricultule that may be
of general interest to you:

"Ultrafiltration has been studied, with mixed results, as an
alternative to
sulfiting white wine (Sims et al., 1989; Goodwin and Morris, 1991). 
Presumably, the ultrafiltration membrane will remove PPO but not 
lower-molecular-weight polyphenols or Maillard-reaction precursors
which could
undergo nonenzymatic browning during storage. Addition of nisin to
wine to
control malolactic fermentation may reduce the amount of sulfur
dioxide used
to control bacterial spoilage (Daeschel et al., 1991). Alternatively,
sulfites
might be removed from wine by ion exchange and treatment with carbon
(Brown,
1991)."

The reference given in the report for the above is "Brown, S.T. 1991.
Method of removing sulfites from standard wine. U.S. patent
5,071,664".

Filtration, as opposed to tablets, seem to be the only method (so far)
for the removal of sulfites from wine or water.  I await further
clarification from you and will continue to search for this elusive
tablet.
