I doubt if anyone has counted the exact number of subplots but this
search might start you off:

You might be interested in an article which discusses Tolstoy's
reasons for wanting to " show the connection between every
melodramatic subplot, every romance, every death, every duel, every
peasant, merchant, soldier, housewife, and nobleman, and the unfolding
conflict between French and Russian armies which marked the end of the
Napoleonic conquests. "
