Hi jupdfl,
Quiche can be frozen prior to baking or after baking.
"...baking first may make the quiche a little easier to manoeuvre in
the freezer. To freeze quiche before baking: Place quiche on a tray or
baking pan and freeze until firm. Wrap with freezer paper or
heavy-duty (or double thickness) aluminium foil or slide quiche into a
freezer bag. Seal, label and freeze for up to one month. When ready to
serve, remove from freezer. Do not thaw. Unwrap and bake as usual,
adding 10 to 20 minutes extra time. To freeze quiche after baking:
Proceed as above. Do not thaw before reheating. Remove wrap and bake
in a preheated 350F oven for about 25 minutes, or until heated
through."

Freezing
"Cool the quiche for about 15 minutes. Eat some now if you want.
Move the quiche to the refrigerator for about an hour.
Stack the quiche three high using parchment paper or waxed paper to
separate them. Put the stack into a gallon sized ziplock bag, remove
as much air as possible. Label the bags with the variety of quiche.
Place in the freezer."

Is it possible to freeze quiche?
Quiche freezes well for up to two months after baking or for one month
before baking. Use any favorite filling like bacon and green chilies,
onion and cheese or ham and artichoke hearts. To freeze quiche before
baking: Tray-freeze until firm; then wrap with freezer paper,
heavy-duty aluminum foil, or slide it into a freezer bag. Seal, label
and freeze up to one month. Do not thaw before baking. Unwrap and bake
as usual, allowing 10 to 20 minutes additional time. To freeze quiche
after baking: Tray-freeze; then wrap with freezer paper, heavy-duty
aluminum foil, or slide it into a freezer bag. Seal, label and freeze
up to two months. Do not thaw before reheating. Unwrap and bake in a
350 degree F. oven for 20 to 25 minutes, or until heated through.
