I am currently working on a project. The project includes
a microcontroller with one attached accelerometer. was told
that the angle of tilt could be measured by taking the
arctan of the values of two of its axis. It is a 3-axis
accelerometer. I was thinking that you could get
acceleration reading on two axises without rotation.

Can the angle of tilt or rotation be found using one 3-axis
accelerometer?
