check your itunes preferences from the itunes drop down menu.
1. make sure the folder path matches the folder you are using to store your files.
2. make sure you checked the option copy music into itunes music
folder (I also recommend checking "let itunes organise my music")
3. double click on the mp3 file for it to open in itunes (if itunes
does not open make sure it is set as your default player, one way to
tell is by looking at the mp3 file weather of not it has an itunes
logo)

after this you will no longer need to worry about manually organising
your music folder. Simply opening the music in itunes (from where ever
the file may be located) will allow itunes to copy it to your music
folder for you. you may delete the original original file
