the quickest way to get them back (version 6+) is to right-click any
of the textured UI handles that are built into the main maya window
(the same things you clicked to make them disappear) and choose to
hide or show any of the UI elements you want from there. If you have
accidentally made them all disappear, you can always get to those UI
handles by opening the channel box or attribute editor docked to the
main window.

All of these settings should be accessable thru the hotbox menu as
well but the easiest is to right-click the UI handles.

There are 3 different ways of doing this:

1) click on Display then UI elements then show UI elements
or if you have turned off the main menu press space then follow above.

2) Right-click on the dotted grips of the remaining toolbars it will
dropdown a list of toolbars to turn off or on

3) press space + click in the eastern region

This should answer your question
