If I take my diamond ring to a jeweler to be reset or if I take my
diamond ring to an appraiser to learn its worth, how can I be certain
that in the process when the diamond is out of my view, that my
diamond is not switched for one of a lesser value?

Unless the diamond has a laser fingerprint (or similar ID ) you cannot
be 100% certain.

You can't be sure, so the moral of the story is only use reputable
jewelers that you or your friends and family trust.

You don't.  You could insist that you watch it being reset or take
your business elsewhere.  My wife does this type of work and lets
people watch if they want.
