if minor manual labor needed, it's fine. but trying to find something
that will take an entire carrot and chopp it into this shape.

I'm not seeing the shape very well. Are they sort of like french fries?

Absolutely. French fries like shape is a good comparison.  approx. 0.5
cm (=0.2 inch) thick, and length can be controlled by first preparing
and cutting the carrot in the desired length manually.
