What's the best way to publish a piece of historical fiction that I'm
writing? Aimed at 10-15 year olds, it's a re-telling of a classic
Greek myth from a new angle. A list of publishing houses that might
be interested and concrete, practical tips on submitting a manuscript
and catching an editor's eye would be welcome.

Hi. Thanks for the quick answer. I've read all the references you
suggested; the other half of what I was looking for was practical tips
on submitting a manuscript and catching a publisher's eye. For
instance: how important is an agent? Should I write the book first,
or only once the idea's accepted? How much of the book should I
submit, either to the agent or to the publisher? Should I include a
character summary? In general, what sorts of things would turn an
editor on ... or off?

Publishers are inundated with unsolicited manuscripts every day.

Routinely, they return those with a SAE and bin the rest.

It is generally accepted that the best way for a first time novellist
to get published is by getting an agent.

Alternatively, you can easily self-publish at very low cost using
digital Print on Demand resources.

Printing is the easy bit; the hard bit is the marketing.

Beware of vanity printers and book marketing 'advisers' who promise
the earth but rarely deliver.

Good luck with your venture!

Take a look at The Writer's Market (which may have a special edition
for young people's literature) and Jeff Hermann's guide to publishers.
Many public libraries have these books in their collections.

Pay particular attention to the introductory materials on publishing
procedures. Don't just cut to the (very useful) listings of
information about individual publishers.

The process can take a while. Be patient and persistent. Consider
sending out a query letter and offering to submit the manuscript on an
exclusive option for a specific period. That way you won't be waiting
for a year or two to see whether a given publisher is going to make an
offer.
