I remember reading somewhere that the percentage of single people in
the UK is on the increase.
I'm after some stats to show this and also to show that, for people in
their thirties, interest in dating, flirting and self-development is
higher than ever before.
Examples of TV shows (here in the UK) that deal with dating and/or
personal development are Faking It, Would Like To Meet and Confidence
Lab. However I'd like some hard evidence/stats with sources to show
that this is happening in real peoples lives.

Since no-one's responded to your question in the first couple of days,
I guess other researchers have, like me, failed to find these stats
online. After preliminary searches, I think the best evidence
available would be articles from the quality press quoting experts or
referring to surveys. From your question, I suspect that wouldn't be
enough for you - but if you are interested, let us know (possibly with
more details of your requirements) and we'll see what we can dig up.
