What are various ways to upload the content of a physical document
(i.e. something written on paper) to your computer? Which is simplest
and which is fastest? I'm only aware of scanning and perhaps faxing.

Scanning and then OCR
Faxing and then OCR
Typing it in 
make a photograph with a digital camera
make microfiches of the docs and attach the reader to a computer for easy look up
