I am a former Eudora user.  And one of the better features of Eudora
were the Filters, where you could type ctrl-J and manually filter the
selected message(s).   With outlook, it appears to be all-or-nothing. 
 For instance, I want to use the Rules to move messages from "Jim
Smith" to his mailbox (perhaps buried 3 levels down).   I only want to
move the message(s) when I say so, and only the ones I have selected.

How do I do this?   Someone with experience with Eudora will know
exactly what I mean.

Quickly Move Outlook Messages
"To quickly move an open Outlook email message, press CTRL+SHIFT+V. 
When the dialog box displays listing all of your folders, select a
folder with the mouse or arrow keys, then press Enter to move the
message to the selected folder.  If you need to create a new folder,
