What are the equations that can be use to calculate mass and heat
transfer of snack food products (such as potato chips) coming out of
conveyor dryer. This answer must come from journal paper.

Are we only talking removal of water?

Does this include freeze drying or only an oven and conveyor?

Do you have other process heat available such as steam?
