Who or what agency(s) is/are responsible for adobting the current
names we have for our states in the US. Like in 1915,
Okeechobee,Florida was founded. But it had been named Tantie for some
time by the locals.

Dear clubknowledge-ga,

The body responsible is the U.S. Board on Geographic Names ?BGN?. It
is a Federal body which was created in 1890 and established in its
present form in 1947. Its task is to maintain uniform geographic name
usage throughout the Federal Government.

This in turn links to the Geographic Names Information System (GNIS).
You can search on this for Okeechobee. The record tells us that a
decision was made in 1917 by the BGN, to recognise the name of
Okeechobee. Tantic is recognised as variant name.
