What are the internal workings of the AGA based chipsets found in
Commodore Amiga Computers? Are datasheets available for the custom
chips?

Not sure what kind of datasheets you're looking for... but if you're
talking about technical layout for the AGA... I'm not sure you'll be
able to find that.

You won't find datasheets.
They're probably owned by Amiga Inc now, having been property of
Commodore back in the good old days.

The 'internal workings' are explained in principle on many Amiga
websites and forums which can be found over the place.
