Hard candy is made by melting sugar down (adding color and flavor)then
letting it harden in the new shape.  Gummy candies are made with alot
of geletan and a little sugar, flavor and color.  Marshmellow candies
are made by whipping up the sugar mixture.  toffee and others like it
are made like hard candy but with butter, and are pulled rather than
mixed.  Does this help?  I know it's general, but so was the question
